“Food defense” is the effort to protèct the food supply from acts of intentional adulteration and acts of terrorism. After the Food Safety Modernization Act (FSMA) became a law, the FDA issued a fìnal rule on the “Mitigation Strategies to Protèct Food Against Intentional Adulteration,” which covered facilities to prepare and implement food defense plans. Penalties for violating the FDA’s regulations continue to climb, and with the added cost related to oversights and recalls, food defense has become a key compliance concern for organizations whose food products reach consumers.
